Fix: Build-Fehler behoben, Bilder optimiert

- pnpm-workspace.yaml entfernt (verursachte Build-Fehler)
- Alle Projekt-Cover-Bilder auf 1200px optimiert und komprimiert
- Gesamte Bildgröße von ~20MB auf ~1MB reduziert
